ANFP Approved Training Programs

ANFP Pathway I*

Our traditional training program. Available online or correspondence by mail. 

Course curriculum:
  • Managing Foodservice and Food Safety
  • Nutrition Concepts and Medical Nutrition Therapy
Course requirements are:
  • 120 hours of classroom experience
    • 14 lessons
    • 3 online exams
  • 150 hours of field experience coordinated by your RD preceptor
    • Field experience is required to be in an institutional foodservice facility
    • May be completed at your current job
    • Must include at least 50 hours in a healthcare facility
  • 50 hours with an approved preceptor
    • 25 hours with an RD in the nutrition unit
    • 25 hours with a RD/CDM/DTR preceptor in non-nutrition units
      •  - If a CDM/DTR preceptor is not available, the RD will oversee the entire 50 hours.
    • Preceptor manual provided online
    • UND online RD preceptor is available for an additional, non-refundable fee of $350.
  • Course requires an active and separate email address for students and preceptors
  • Assignments are submitted as Microsoft Word documents.

ANFP Pathway III(b)*

For those with two years of full-time non-commercial foodservice management work experience.  Available online or correspondence by mail. 

Course curriculum:

  • Managing Foodservice and Food Safety
  • Nutrition Concepts and Medical Nutrition Therapy

Course requirements are:

  • 120 hours of classroom experience
    • 14 lessons
    • 3 online exams

ANFP Pathway III(b) Accelerated Track* 

  • Accelerated version is available for an additional $50. Complete course requirements in 2 months time. Expect to spend 30-35 hours per week in classroom work.

Costs for Pathways I and III(b)

UND - $600 non-refundable fee includes online tuition, required materials, preceptor materials (Pathway I) and exams. Additional fees may apply based on the information above.
  • Correspondence by mail version is available for an additional $50 fee. 
  • Correspondence by mail students will receive manuals in the mail. Students send/receive assignments through the U.S. Mail. All Preceptors receive their materials online.
  • Course exams and preceptor manual are only available online.
ANFP - Textbooks (two 4th edition required) are an additional fee and are purchased through ANFP.  http://www.anfponline.org/education-career/students

ANFP Pathway II 

For those with a two or four year college degree in foodservice management, nutrition, culinary arts, or hotel-restaurant management. Enroll in the course(s) you need to complete the educational requirements for Pathway II.

  • Nutrition Fundamentals
  • Foodservice Management I
  • Foodservice Management II

ANFP Pathway V 

For those with an alternate two-year, four-year or higher college degree, PLUS a minimum of five years of full-time non-commercial foodservice management experience. Enroll in the course(s) you need to complete the educational
requirements for Pathway V.

  • Nutrition Fundamentals
  • Foodservice Management I
  • Foodservice Management II

  • $275 per course
  • Enroll any time
  • Online, independent study format
  • Take up to 6 months to complete your course(s)
  • No refunds are allowed
  • Optional extension is available

Textbooks are an additional fee and are purchased through ANFP
