New Term-Based Pathway I Program

The University of North Dakota’s Nutrition and Foodservice Professional Training Program is excited to announce the launch of a new term-based Pathway I program beginning January 2027!

This new format is designed for students who prefer structured learning, regular deadlines, live virtual instructor office hours, and interaction with classmates rather than completing coursework entirely at their own pace.
The term-based Pathway I program will be completed within one calendar year and consists of three 12-week courses.
Students will benefit from:
- Set due dates for course assignments to help keep you on track.
- Live instructor checkpoints throughout the courses to provide guidance, answer questions, and help you stay engaged. Checkpoints will be recorded for students who are unable to attend live.
- Classmate discussions and interaction to encourage collaboration and sharing of ideas and experiences.
- Instructor guidance and accountability throughout the program.
- A clearly defined timeline designed to help students successfully complete the program within one calendar year.
The program fee will cover the cost of the guided course and the UND RD Preceptor fee. More information on the program fee will be available once registration is open.
Textbooks are an additional cost and must be ordered from the Association of Nutrition and Foodservice Professionals (ANFP), not UND. Two textbooks are required for the Pathway I Term-Based Dietary Manager Course: Foodservice Management by Design, 4th edition and Nutrition Fundamentals and Medical Nutrition Therapy, 4th edition.
Important: This is a Structured Program.
Because this program is designed around a specific course schedule and timeline, extensions will not be available for assignments or course completion.
Students should be prepared to actively participate, meet established deadlines, attend or view instructor checkpoints, and remain engaged throughout each 12-week course.
If you know you need additional structure and accountability to stay on track, this may be the Pathway I format for you!
Pathway I includes a required 150 hours of field experience in an institutional foodservice facility.
To meet this requirement, students must either:
- Be currently employed at least part-time as a foodservice employee in an institutional foodservice facility; OR
- Arrange their own opportunity to complete the required 150 hours of field experience in an institutional foodservice facility.
Of the required 150 hours, a minimum of 50 hours must be completed in a healthcare facility.
Please note: UND does not arrange field experience sites or enter into contracts with field experience facilities on behalf of students. Students are responsible for identifying and securing an appropriate field experience site.
Before beginning the Pathway I term-based program, students must:
- Be a high school graduate, have a GED certificate, or provide a letter of endorsement from their supervisor and administrator.
- Be endorsed by the administrator of the facility where field experience will occur.
- Have regular access to email and check email frequently throughout the program.
- Be prepared to meet all course deadlines and actively participate throughout the three 12-week courses.
